Chef and co-owner of one of the world’s best restaurants has recreated modern food trends by using food native to Australia.

Danish chef and co-owner of Noma in Denmark, Rene Redzepi, first visited Australia three years ago with a complete ignorance of Australian native food. However, after experiencing the taste of some of the native food, he now craves it and has foraged it to use in his dishes.
